Coca-Cola Meatloaf

Another all time favorite festive food for the Yuletide season is the Coca-Cola Meatloaf
Ingredients 2 Tbsp unsalted butter 1 cup of finely chopped onion 1 celery rib, finely chopped 1 carrot, finely chopped 1/2 cup of finely chopped green onion, including the green onion greens 3 cloves garlic, minced (about 1 Tbsp) 2 teaspoon salt (use 1 1/2 teaspoons if using Italian sausage) 1/2 teaspoon freshly ground black pepper 2 teaspoons Worcestershire sauce 2/3 cup ketchup, divided 1/3 and 1/3 1 can coca-cola 1 1/2 pounds of ground beef (chuck) 3/4 pound of spicy ground pork sausage or Italian sausage (a mix of sweet and hot if you are using links) 1 cup fresh bread crumbs 2 large eggs, beaten slightly 1/3 cup minced fresh parsley leaves Instructions Preheat oven to 350° F, with a rack in the middle of the oven. Melt the butter in a large, thick-bottomed skillet, on medium heat. When the butter starts to foam, add the finely chopped onions, celery, carrot, green onions and garlic to the pan and cook for 5 minutes. Cover the pan and cook for another 5 minutes, until the carrots are tender, stirring every so often. Sprinkle with salt and pepper. Add the Worcestershire sauce and one-third cup of ketchupand coca=cola. Cook for another minute and remove from heat to cool. Once the vegetables have cooled to the touch, place them in a large bowl with the ground beef, Italian sausage, eggs, breadcrumbs and parsley. Use your (very clean) hands to mix them together until everything is evenly distributed. Place the meatloaf mixture into a loaf pan (either 4×8 or 5×9) and press to make compact in the pan. Or you can form a free-standing loaf onto a rimmed baking pan. Cover the meatloaf mixture with the rest of the ketchup. Bake for 1 hour at 350°F, or until a meat thermometer inserted into the center of the meatloaf reads 155°F. Remove from oven and let sit for 10 minutes. Then use a metal spatula to gently lift the meatloaf out of the loaf pan to a serving plate. Make thick slices to serve. The meatloaf makes great leftovers, just chill and reheat. Slices are good in sandwiches as well.

Menudo with Coca-Cola

Menudo with coca-cola, a twist from the original menudo. These additional ingredients enhances the flavor of this menudo dish.
Ingredients 2 lbs. pork, cubed 1/4 lb. pig’s liver, cubed 4 hotdogs, sliced diagonally 2 medium baking potatoes, peeled and cubed 2 medium carrots, peeled and cubed 1 medium yellow onion, chopped 2 teaspoons minced garlic 1 teaspoon minced ginger 3/4 cups frozen green peas 3 pieces dried bay leaves 15 oz. tomato sauce 500ml Coca-Cola 3 tablespoons cooking oil Salt and pepper to taste Cooking Procedure Heat the cooking oil in a wide cooking pot. Saute the hotdogs for 1 minute. Transfer the hotdogs in a plate while leaving the remaining cooking oil. On the same cooking pot, add-in the ginger. Saute for 30 seconds to a minute. Put-in the liver. Continue to saute for 2 minutes. Transfer to a plate while leaving the remaining cooking oil in the cooking pot. Set the liver aside. On the same cooking pot with remaining cooking oil, saute the onion and garlic until the onion becomes soft. Note: you can add more oil if there isn’t enough left. Add-in the pork. Continue to cook until light brown. Pour-in the tomato sauce and Coca-Cola. Bring to a boil. Add the dried bay leaves and simmer for 45 to 60 minutes or until the pork becomes tender. Put-in the sauteed liver and hotdog. Stir. Add the carrots and potatoes. Cover and cook for 8 minutes. Put-in the green peas. Stir. Add salt and pepper to taste. Transfer to a serving plate. Serve. Share and enjoy! Number of servings (yield): 6

Coca-Cola Caldereta Recipe

Caldereta is a hearty meat dish using chevon (goat meat), beef, or pork combined with potatoes, carrots, tomato sauce, and liver spread or liver paste. This is a popular dish served during special occasions and a regular in every Filipino cookbook.With the additional coca cola instead of water adds the tasty taste of your caldereta.
Ingredients 2 lbs beef, cubed 3 garlic cloves, crushed and chopped 1 onion, finely chopped 500ml coca-cola 1 cup red bell pepper, cut into strips 1 cup tomato sauce ½ cup liver spread or liver paste (processed using blender) 1 tsp. crushed chili 3 large bay leaves 2 cups potatoes, sliced 2 cups carrots, sliced 1 cup cooking oil ⅔ cup green olives salt and pepper to taste Instructions Heat the cooking oil in the pan and fry the carrots and potatoes until color turns light brown Remove the fried carrots and potatoes from the pan and set aside In the same pan where the vegetables were fried, sauté the garlic and onions Add the beef and simmer for 5 minutes Add coca cola and let the beef boil until tender (about 30 mins if using pressure cooker or 1 to 2 hours if using an ordinary pot). Add the tomato sauce and liver spread and simmer for 10 minutes Add green olives, carrots, bay leaves, bell pepper,crushed chili,and potatoes and simmer for 5 to 8 minutes Add salt and pepper to taste Serve Hot. Enjoy!

Coca-Cola Spaghetti Recipe

Being loved mostly by the young ones, every kiddie party won’t be complete without this dish.This version of Spaghetti requires the use of coca-cola rather than sugar or sweetened milk , hotdogs, and banana ketchup. It might some peculiar to some but these ingredients brings up a whole new flavor that is totally Filipino.
Ingredients 2 lbs Spaghetti 1 big bottle banana ketchup 1 big can Tomato sauce (approximately 4 cups) ½ cup Tomato Paste 1 tsp Garlic, minced 1 ½ lbs Ground Meat (pork or beef) 4 pcs Hotdogs, sliced 1 medium sized Onion, diced Cheddar Cheese 2 tbsp Salt Coca-Cola (about 1 liter) 4 tbsp Cooking Oil Instructions In a large pot, pour the water in and bring to a boil Put-in the salt and oil Add the Spaghetti Noodles and cook until tender (see package for cooking time) then set aside Using a separate pan, saute the garlic and onions Put-in the round meat and let cook for 5 minutes Add the hotdogs and cook for 2 minutes Put-in the tomato sauce, banana catsup, tomato paste, and coca-cola then simmer for 15 to 20 minutes Place the sauce on top of the cooked noodles and add some cheese Serve hot. Coca-Cola Fried Chicken Recipe

All of us take our fried chicken very seriously it's on a badge of honor who can make the best
Ingredients 4 cups all-purpose flour, divided 2 tablespoons garlic salt 1 tablespoon paprika 3 teaspoons pepper, divided 2-1/2 teaspoons poultry seasoning 2 eggs 1 bottle of coca-cola 1 teaspoon salt 2 broiler/fryer chickens (3-1/2 to 4 pounds each), cut up Oil for deep-fat frying Directions In a large resealable plastic bag, combine 2-2/3 cups flour, garlic salt, paprika, 2-1/2 teaspoons pepper and poultry seasoning. In a shallow bowl, beat eggs and coca-cola ; add salt, pepper and remaining flour. Dip chicken in egg mixture, then place in the bag, a few pieces at a time. Seal bag and shake to coat. In a deep-fat fryer, heat oil to 375°. Fry chicken, several pieces at a time, for 5-6 minutes on each side or until golden brown and juices run clear. Drain on paper towels. Yield: 8 servings.

Coca-Cola FRESH BANANA CAKE WITH SEA FOAM FROSTING

To complete the meal with a sweet fresh banana cake courtesy with journey staff, here is a dessert for everybody.Happy Holiday everyone. 1 pkg. (18.5-ounce) yellow cake mix* ⅛ tablespoons baking soda 2 eggs ¾ cups Coca-Cola 1 cup (2 to 3) mashed ripe bananas 2 teaspoons lemon juice ⅓ cups finely chopped nuts (optional) 2 egg whites (1/4 cup) 1 ½ cups firmly packed light brown sugar ⅛ teaspoons cream of tartar or 1 tablespoon of light corn syrup ⅓ cups Coca-Cola 1 teaspoon vanilla extract 1 dash Salt Preparation TOTAL TIME: 1 hr 5 min Prep Time: 25 min Cook Time: 40 min For Cake: In large mixing bowl combine mix, baking soda and eggs. Measure CocaCola, stir briskly until foaming stops, and add to batter. Blend ingredients just until moistened, then beat at high speed of electric mixer for 3 minutes, scraping bowl often. Combine mashed bananas with lemon juice. Add to cake batter with nuts. Beat 1 minute at medium speed and turn into a generously greased and lightly floured 13x9x2-inch pan. Bake at 350° about 40 minutes or until cake tests done. Cool on rack 15 minutes, remove cake from pan and turn right side up on rack to finish cooling. For Frosting: In top of double boiler, combine all ingredients except vanilla and beat 1 minute at high speed of electric mixer. Place over boiling water (water should not touch bottom of top part); beat on high speed about 7 minutes until frosting forms peaks when beater is raised. Remove from boiling water (for smoothest frosting, empty into large bowl). Add vanilla and continue beating on high speed until thick enough to spread, about 2 minutes. Spread on sides and top of cold banana cake. *do not use mix with pudding added or which requires oil **To reduce foam for accurate measurement, use Coca-Cola at room temperature and stir rapidly

Rub fat side with brown sugar. Pour Coca-Cola over ham. Pour crushed pineapple over ham. Bake at 450 degrees for 3 hours, or until 140F. Makes 6 servings

Ginger Coca-Cola Chicken Wings

IngredientsServings: 2 slices ginger 12 chicken wings, just the middle section 2 teaspoons cooking oil ½ cups dark soy sauce 1 12-ounce can of Coca-Cola Preparation TOTAL TIME: 35 min Prep Time: 5 min Cook Time: 30 min Heat a small-medium sized pot, add the oil and ginger. When the oil is hot, brown the wings on both sides. Do this in batches if necessary. When all the wings are browned, take out the ginger, and add the soy sauce and Coke into the pot. Bring to a boil, then turn to medium/low-medium heat and simmer for about 30 minutes or until meat falls of the bone easily. Taste the sauce to see if it is needs more soy sauce. If not, turn heat back on high for a few minutes to let the sauce thicken. Make sure the wings are covered with the Coke/soy sauce mixture. Add more sauce according to taste. Serve.

Instructions: Combine the chocolate frosting, chocolate chips, and butter in a microwave safe bowl. Heat for 30 seconds in the microwave. Stir and heat for an additional 20 seconds or until the mixture is completely smooth Let the mixture cool for several minutes. Once the mixture is cool enough to handle, begin rolling it into balls approximately 1″ in size. Place the ball onto a sheet of parchment paper and flatten slightly. Use your finger tips to square the sides as well. Let the fudge squares cool completely before adding the Candy Cane Topping. When the fudge is firm fill your piping bag with candy melt. Heat in the microwave for 25 seconds. Squeeze the piping bag to mix the candy melt. Return to the microwave for an additional 25-30 seconds or until the candy completely melted. Snip the end off of the piping bag and carefully drizzle the candy melt over each fudge square. Allow the candy melt to become hard before transferring from the parchment paper to a serving dish. RAW VEGAN CARROT CAKE with CREAMY CASHEW LEMON FROSTING 

Cashew lemon frosting:
1 1/2 cups cashews
Juice from 1 lemon 
2 tablespoons liquid coconut oil
2 tablespoons coconut nectar 
1 teaspoon vanilla powder
Water, as needed 

Carrot cake:
3 large carrots, peeled and chopped into small chunks 
1 1/2 cups oats 
2 cups dates
1/2 cup dried coconut 
1 teaspoon cinnamon 
1/2 teaspoon nutmeg 

To make the frosting: blend all ingredients in your high speed blender until smooth, adding water as needed. Taste it - mmm. Put in the fridge. 

To make the cake: process the oats into flour in your food processor then throw the rest of the ingredients in the food processor and process until it all begins to stick together. 

Assembly: press half the cake mixture into a small spring form pan (mine is about 4 inches). Gently take this out and put on a plate, then put in the freezer until it's solid. Do the same to the remaining half of the cake mixture. Spread about 1/3 of the frosting onto the top of one of the cake layers. Put it in the freezer until the layer of frosting is hard. Place on the other cake layer and frost the entire thing, I let it set in the fridge overnight.

1/3 cup cacao powder (or carob powder)
1/4 cup cacao butter (or coconut oil)
2 tablespoons coconut sugar (or maple syrup) 
2 tablespoons tahini (or almond butter) 
1/2 teaspoon vanilla powder (or vanilla extract)

Melt the cacao butter in a pot on low heat, then take off the stove and gently whisk in the rest of the ingredients. Pour into chocolate molds or cupcake papers. Put in the freezer until solid. I like to eat mine dipped in almond butter. 
*Or use 1 teaspoon spirulina, 1/2 teaspoon ginger powder, 1/4 teaspoon sea salt, and 1/2 teaspoon mushroom powder if you have any (the magical kind or otherwise)...

IngredientsServings: 2 cups sugar 2 cups all-purpose flour 1 cup Coca-Cola 1 ½ cups small marshmallows ½ cups butter or margarine ½ cups vegetable oil 3 tablespoons cocoa 1 teaspoon baking soda ½ cups buttermilk 2 eggs 1 teaspoon vanilla extract ½ cups butter 3 tablespoons cocoa 6 tablespoons Coca-Cola 1 box (16-ounces) confectioners' sugar 1 teaspoon vanilla extract 1 cup chopped pecans Preparation TOTAL TIME: 1 hr 15 min Prep Time: 30 min Cook Time: 45 min Preheat oven to 350 degrees. In a bowl, sift the sugar and flour. Add marshmallows. In a saucepan, mix the butter, oil, cocoa and Coca-Cola. Bring to a boil and pour over dry ingredients; blend well. Dissolve baking soda in buttermilk just before adding to batter along with eggs and vanilla extract, mixing well. Pour into a well-greased 9- by-13-inch pan and bake 35 to 45 minutes. Remove from oven and frost immediately. Coca-Cola Cake Frosting To make frosting, combine the 1/2 cup butter, 3 tablespoons cocoa and 6 tablespoons of Coca-Cola in a saucepan. Bring to a boil and pour over confectioners' sugar, blending well. Add vanilla extract and pecans. Spread over hot cake.
